Saucy Cranberries

teri williams' cranberriesI am always looking for a new spin on a traditional holiday meal. While reading through my new Rodale’s Organic Life magazine, I came across this Pickled Cranberries recipe and seasonal Kale Salad. Pickling is super easy, with very few ingredients and results in a big flavor with many uses. I sealed several jars of the pickled cranberries and will give them out as hostess gifts throughout the holiday season. And if you come to my house over the holidays, you most likely will be served a fresh cranberry cocktail and a side of healthy kale salad!

Pickled Cranberries (makes 2.5 cups)
Note: Always use fresh organic cranberries.

In a medium saucepan, combine 3/4 cup sugar and 1-1/2 cups of red wine vinegar. Tie 1/2 tsp. of coriander seeds and 1/2 tsp. peppercorns in a square of cheesecloth and add to the pan. Bring to a boil over medium heat, stirring until sugar dissolves.

pickled-cranberriesAdd 10-12 oz. fresh or frozen cranberries and bring back to a boil. Lower heat to a simmer and cook until skins begin to split, 2-3 minutes. Let cool in saucepan, remove and discard spice sachet, and transfer cranberries and liquid to a jar. Refrigerate in sealed jar until ready to use. Pickled cranberries will keep for a few weeks; or process to seal according to canning practices.

The liquid can be strained to use in cocktails, and the pickled cranberries can be tossed into salads and stuffings.

My favorite easy hors d’oeuvre is as follows:

Slice baguette into 1/4-inch slices (may toast or leave soft), top with your favorite ricotta cheese, place a dollop of pickled cranberries and finish with a drizzle of honey. A sweet, tart, smooth and tasty treat in minutes!

1/2 cup cooked wild rice
1/2 tsp. salt
1 medium shallot, finely chopped
1 Tbsp Dijon mustard
Fresh ground black pepper
3 Tbsp. liquid from pickled cranberries (see above recipe)

3 Tbsp. extra virgin olive oil
1 bunch kale, stemmed and shredded into thin ribbons
1 cup pickled cranberries, drained
1/2 cup goat cheese, crumbled
1/2 cup toasted pecans, coarsely chopped (can use walnuts)

In small bowl stir together shallot, mustard, pinch of salt, pepper and pickling liquid. Whisk in oil. Pour half the liquid, adding more as needed, and use your hands to massage into kale for 5 minutes.

To serve, lightly toss with rice, cranberries, cheese and nuts. Serve as a side dish or add chicken or salmon to create a colorful and satisfying main dish.

T Williams Realty Celebrates 10 Years of Smooth Sailing in 4th of July Parade

It’s our 10th Anniversary year and T Williams Realty celebrated by joining in Orcas Island’s Fourth of July Parade and bringing home the Grand Prize! Our colorful house rolled through Eastsound with its front and back gardens as we distributed burlap-bag-wrapped bee flower seed bombs to parade viewers lining North Beach Road.

The float was a true “Collaboration for Success” as Teri Williams came up with the concept and asked Erik Sircely to design and build the little house (which will double as a playhouse for her grandchildren). Sandi Friel helped paint the house and its trim. Marlis Sandwith designed and ordered the T-Shirts. Beth Holmes and Mandy Randolph made the Bee Feed Flower Seed Bombs along with instructions for use. Everyone painted a sign for the signpost. Teri ordered the T Williams Realty banners that spanned the roof and purchased dozens of flowering plants for the tiny house gardens and window boxes. Mary Ann Sircely was office support and on-site arranging the plants and garden art on the float. Jay Fowler pitched in here, there and everywhere to make it all happen, even giving John Cadden’s trailer a shiny new coat of paint. Cory was the “go-to guy” when we needed any support, be it chasing down materials or meeting clients. Jim Hamilton hauled the float with his ’42 Chevy truck. Bob Friel put it all in color for us. What a team! Family members joined in, little ones rode inside the house, and we all had a great time.

SPRING EVENTS

6th Grade Girls Leadership Group – Join us for 6 weeks of fun and celebrate what it means to be a strong leader- games, art, skits, and meaningful discussions. Wednesdays, 3:15-4:45 p.m., at Salmonberry School. $60. Starts May 4.

“GET REAL” – This is a leadership group about REAL stuff. REAL talk about REAL relationships, human weirdness, social issues, sexuality, school and life – handled in a safe (and often funny) manner. Facilitated by Beth Jenson LMHC, funded by the Funhouse, designed for (and by) smart, passionate teens that care about being REAL. 7th-9th graders. Next classes April 22nd & May 27th, 7-9 p.m. at the Funhouse.

“Inspire Orcas” Career/Skill Fair – for high school students looking to be inspired. Coming to Orcas Island High School on May 20 in partnership with the Orcas Island School District, Chamber of Commerce and Funhouse Commons. Stay tuned for more details.

Tuesday, May 3 is GiveBig – On this day all of your donations to Funhouse Commons will have an even greater impact thanks to a generous stretch pool of funds raised by The Seattle Foundation.

One World Music Festival – June 17 and 18.  This show sells out every year so get your tickets early!

County Posts Locally Adopted SMP Documents

Nine Shoreline Master Program (SMP) documents adopted by the San Juan County Council are now available on the county website.

According to Colin Maycock, county planner, the SMP Update is considered “locally adopted” and will not become effective until the update is adopted by the Washington State Department of Ecology. “The next step in this process is submittal of the locally adopted update and supporting documentation to the Department of Ecology,” said Maycock.

Ecology’s review process will include a public comment period during which time members of the public may submit comments to the WDOE, he added.

Council to Hear Public Testimony on Shoreline Master Program

The San Juan County Council will be taking public testimony on the proposed Shoreline Master Program (SMP) update at a Public Hearing on March 29, 2016, 9:15 a.m. in the County Council Chambers, 55 Second Street, Friday Harbor, according to Colin Maycock, county planner.

The Council will be considering the following documents:

  • The draft Comprehensive Plan Section B, Element 3
  • The draft ordinance repealing Sections 18.50.010 – 18.50.390 of Chapter 18.50 SJCC and amending Official Comprehensive Plan Land Use and Shoreline Maps; adopting new Shoreline Master Program Regulations and a Shoreline Restoration Plan; and amending Section B, Element 3 of the Comprehensive Plan and Chapters 18.20 and 18.80 SJCC.

Next Meeting on Shoreline Master Plan to be Held Wednesday

San Juan County has released the following schedule of meetings to guide the review of the Shoreline Master Program documents:

Meeting 2 is set for Wednesday, January 20, 2016 from 9 a.m. to 4:30 p.m. in the Legislative Hearing Room, Friday Harbor, and will cover Shoreline Maps and Designations; Shoreline Regulations: Sections 15 through 22 – Archaeology, Clearing/Grading/Vegetation, Environment & Critical areas, Flood Hazards; Sections 23 through 28 – Public Access, Signs, Lighting, General Regulations, Agriculture & Aquaculture.

Meetings 3 & 4 are to be held Monday, January 25, 2016 and Tuesday, January 26, 2016. They will focus on Shoreline Regulations: Sections 29 through 48 – Shoreline Modifications, Overwater structures, Boating facilities, Shoreline stabilization, etc.; Sections 49 through 66 – Shoreline Uses, Shoreline Use and Modification tables; Sections 67 through 79 – Definitions, Density, Dimension and Open Space.

Meeting 5 – (TBD) Requested Follow-Up Information/Adoption.

Meeting 1, held January 11, 2016, addressed General Policy Plan, Regulation Sections 7 through 14 – Process and Administration, Non-conforming uses, Exemptions.

For each meeting staff will provide the portion of the comment summary corresponding to the discussion topic, sorted in page number order, with staff responses to the comments. The hearing documents will be available electronically and projected onto the screen for use during deliberations.

County Updates

Eastsound Subarea Plan Approved

The County Council has completed deliberations on the Eastsound Subarea Plan and approved a final update ordinance, which, once signed, will be added to the council’s list of adopted ordinances.

 

Shoreline Master Plan Update

Councilman Rick Hughes recently announced the postponement of the Shoreline Master Program update hearings until January 2016. At the November 30 hearing, county residents expressed concerns about the proposed document. Hundreds of pages of comment and documentation have been submitted to the council. The proposed document can be viewed here.
